The Flying Fish restaurant project involved the refurbishment of three main areas. The new bar was built in a different location to the previous bar with new beer and post-mix lines. Bottle and glass displays hanging from the concrete soffit above required structural steel traversing existing services. The bar and kitchen were built on new concrete plinths and the concrete had to be mixed on site due to its location in The Star.  The fresh fish display is an extension of the kitchen preparation area and the focus point of the restaurant. The display area is lower than the kitchen to enable guest interaction with the display. The benchtops and face of the display are made from natural stone over under-bench climate-controlled refrigeration. A heated low-height glass viewing panel has been seamlessly incorporated in the front of the display.  The dining areas and private dining room are separated by operable walls.  Issues that were encountered and overcome include sharing the site with the main building contractor, installation of new services that had to come from floors below and the underslung works and core holes through to the bus driveway below.  Shape was able to deliver a smooth, defect-free project 37 days early and on budget.
